COD: The essential fish of Portuguese gastronomy


Gastronomy is at the heart of Portuguese culture. It is one of the richest in the world thanks to the infinity of influences that have enriched the traditional dishes of the country: you will find flavors evoking the cuisine of the Maghreb, England or France, because the history of the country was mingled with that of these cultures.


Among these famous foods: cod. It is impossible to avoid this fish at the base of the Portuguese diet, especially in the North and Center of the country.


It should be known that cod is closely linked to the period of great discoveries since navigators were forced to find a non-perishable food capable of withstanding a trip of several months. The salted cod offered these qualities and its introduction favored the great expeditions of the navigators.

In addition, cod brings high nutritional qualities. Loaded with protein and vitamin B, it remains low in lipids: it is therefore a nutritious and healthy food for the balance of the body.

Portuguese cod recipe:


The day before:

Brush the cod under running water, cut into pieces and soak in a large pan of cold water for 24 hours, changing the water 4 or 5 times. This step is essential in order to desalt the cod.


D-day :

1.Wash the potatoes and cook them with their skin in salted water about 20 minutes.

2.Peel the onions and garlic cloves, then slice the onions and chop the garlic.

3.Drain the cod, put it in a pan of cold water, and put on the fire.

4.Remove the pan at the first quiver and let the cod poach for 15 minutes.

5.Drain, peel and cut the potatoes into slices. Preheat the thermostat oven 7 (210 ° C).

6.Drain the cod. Remove skin and bones and crumble.

7.Heat the oil in a pan, and sweat without coloring, onions and garlic.

8.Add cod and potatoes, season with pepper and pour into an earthen dish. Put in the oven15 min.

9.5 minutes before the end of cooking add the black olives. Serve very hot from the oven.


 This dish can be prepared 2 or 3 hours in advance and put in the oven at the last moment.
